Coating Fats 34-37

Coating Fat 34-37 is a lauric-based specialty fat with a slip melting point of 34–37°C, designed for confectionery and bakery coatings. Derived from palm kernel oil, it offers a sharp melting profile, clean melt, and glossy finish without a waxy aftertaste. It is firm and dry at ambient temperature, making it ideal for enrobing biscuits, wafers, ice cream cones, and moulded confections.

Key benefits include excellent gloss, good contraction for demoulding, and bloom resistance.

Coating Fat Production

Coating Fat Production involves fractionation of palm kernel oil to isolate the higher-melting stearin, followed by controlled hydrogenation to raise the melting point and improve stability. The hydrogenated fat is then refined through bleaching and deodorisation to remove impurities and odours, and may be blended to fine-tune the solid fat content. The final product is packaged in 20 kg cartons and requires no tempering before use.

Coating Fat 34-37 Uses

Coating Fat 34-37 is primarily used in confectionery and bakery applications where a sharp melting profile, glossy finish, and bloom resistance are required. Its most common use is in compound chocolate coatings for enrobing biscuits, wafers, ice cream cones, and moulded confections, where it delivers a clean, rapid melt at body temperature without the need for tempering.

Applications in Compound Chocolate Coatings

Coating Fat 34-37 is a primary fat for compound chocolate coatings used to enrobe biscuits, wafers, and confectionery bars. It requires no tempering, delivers a glossy finish, and provides a clean, sharp melt at body temperature. Its excellent bloom resistance ensures products maintain their appearance during storage and display.

Applications in Ice Cream Enrobing & Frozen Novelties

This fat is ideal for chocolate shells on ice cream bars, cones, and frozen novelties. Its low melting point (34–37°C) produces a thin, non-brittle coating that adheres well and melts rapidly in the mouth. It also acts as a moisture barrier, helping to maintain the quality and texture of frozen desserts.

Applications in Bakery Glazes & Pastry Coatings

Coating Fat 34-37 is used in bakery glazes for pastries, doughnuts, and cakes. It provides a smooth, glossy sheen and a clean melt without a waxy aftertaste. Its stability and neutral flavour make it suitable for both sweet and savoury baked goods requiring a protective or decorative coating.
